Cheddar Chowder
6 cups water
6 cups diced potatoes
1 1/2 cups diced carrots
1 1/2 cups diced celery
3/4 cup chopped onion
3 teaspoons salt
3/4 teaspoons pepper
White Sauce:
3/4 cup butter
3/4 cup (closer to a cup) flour
6 cups milk
6 cups grated cheddar cheese
3 cups cubed ham
3/4 cup (closer to a cup) flour
6 cups milk
6 cups grated cheddar cheese
3 cups cubed ham
Combine water, potatoes, carrots, celery, onion, salt and pepper in large pot. Boil 10-12 min. Meanwhile, in smaller pot make white sauce by melting the butter. Add flour and stir until smooth (about 1 min.). Slowly add milk; cook until thickened. Add grated cheese to white sauce; stir until melted. Add white sauce and cubed ham to vegetables that have not been drained. Heat through.
